This Omelet Is In the Bag

I call this the "Brooks Omelet" because it was introduced to Judy and me by our good friends, Gene and Joyce Brooks. It is delicious and delightfully easy to put together.

Begin with a zip lock bag which can stand up to boiling water.

Into that bag place two eggs (no shells, please). Then add whatever ingredients you would like in your omelet.

Seal the bag and smush all the ingredients together until thoroughly mixed.

Place the bag in boiling water for thirteen minutes.

Remove from the water, unseal the bag, and ... voila! ... a compact and well-worth-waiting-for omelet.

Special thanks to Mr. and Mrs. Brooks for this new addition to our must-do-again recipe collection
